The Sales Order Activity History will track every action that impacted an order, who did it, and when it occurred.
Actions like Updating Sales Order Status, Recording Payments, Updating Line items, and (much, much) more are tracked on the Activity History.
It can also be downloaded to CSV and filtered for action, user, or date.
